Holiday Pumpkin Recipes

Holiday cooking fills the air with wonderful smells of cinnamon and

spices and takes me back in time to my grandmothers kitchen.

These recipes are tasty ways to use pumpkin or sweet potatoes. (PSP)

PSP Pudding
(pumpkin OR sweet potato)

2 eggs
1 1/2 cups milk
3 cups mashed PSP
1 stick(1/2 cup) butter
1 1/2 cup sugar
1/4 tsp salt
2 tsp pumpkin pie spice
2 tsp vanilla

Mix all the above ingredients together well.

Add to mixture: 1 cup raisins, 1 cup coconut and 1 cup chopped pecans.

Pour into a lightly greased baking dish.

Bake at 350 degrees for approximately 1 hour or until pudding firms up.


PSP Cream Pie

2 cups cold milk
2 small packages vanilla instant pudding & pie filling
1 tsp pumpkin pie spice
1 cup canned PSP
1 cup thawed whipped topping
extra whipped topping for garnish
1/2 - 1 cup chopped pecans (optional)
1 baked 9" pie shell (cooled)

Combine milk, pie filling mix, PSP, spice and whipped topping in a deep narrow bottomed bowl.

Beat on low speed for 1 minute.

Pour into pie shell.

Chill until set, at least 3 hours.

Garnish with whipped topping and pecans.


No Fail Pie Crust

1/3 cup oil
1/4 cup water

Boil these two ingredients together in a medium size pot.

Pour in 1-cup self-rising flour.

Mix well. Spread in pie pan.

Makes 1 pie crust.


PSP Custard

1 cup cooked or canned PSP
1/2 cup brown sugar
dash ginger
2 eggs slightly beaten
1/2 tsp salt
1/2 tsp cinnamon
1 cup milk
3/4 - 1 cup raisins
3/4 - 1 cup coconut

Mix all ingredients together.

Pour into lightly greased baking pan.

Bake at 325 degrees until done.

PSP Cupcakes

2 eggs
1/2 cup vegetable oil
1 cup sugar
1 cup self rising flour
1 1/2 tsp pumpkin pie spice
1/2 tsp baking powder
1 cup canned PSP
cream cheese frosting-see recipe below

Beat eggs.

Add vegetable oil, sugar, flour, spice, baking powder, and PSP to eggs.

Mix well.

Using paper-lined muffin pan, fill each liner 3/4 full with batter.

Bake at 350 degrees for 25 to 30 minutes.

Let cool.

Frost with cream cheese frosting.

Yield: 1 dozen

Cream Cheese Frosting

4 oz cream cheese softened
5 tsp softened butter or margarine
1 1/4 cups sifted powdered sugar
1 tsp vanilla extract

Beat cream cheese and butter until light and fluffy.

Add sugar and vanilla.

Beat until smooth.

Yield: Enough to frost 1 dozen cupcakes.


PSP Cookies

2 1/2 cups self rising flour
1/2 tsp baking powder
1/2 tsp salt
2 tsp pumpkin pie spice
1 1/2 cups sugar
1/2 cup butter(1 stick) softened
1 cup PSP
1 large egg
2 tsp vanilla extract
glaze-see recipe below

Preheat oven to 350 degrees. Grease baking sheets.

Combine flour, baking powder, salt, and spice in a medium bowl. Set aside.

Beat sugar and butter in a large mixing bowl until well blended.

Add PSP, egg, and vanilla extract to sugar and butter mixture beating until smooth.

Gradually add flour mixture, mixing well.

Drop by rounded tablespoon onto greased baking sheets.

Bake for 12 to 15 minutes or until edges are firm.

Cool on baking sheets for 2 minutes.

Remove to wire racks to cool completely.

Yield: approximately 36 cookies

Drizzle glaze over cookies.

Glaze

2 cups sifted powder sugar
3 tbsp milk
1 tbsp melted butter
1 tsp vanilla extract

Combine in small bowl and beat until smooth.

Drizzle over cooled cookies.
